If you have not checked out iTunesU then you should. Especially, if you are interested in Mac and iPhone/iPad development you need to see the videos from WWDC and the Essentials videos. They are located on iTunes.

Stanford iPhone App Dev

Stanford University is making available the courses on iPhone development. The profs are actual Apple employees. Great resource to have.
